Ingredients
Broccoli florets
Sharp cheddar cheese
Milk or cream
Chicken or vegetable broth
Onion
Garlic
Olive oil or butter

Protein powder or high-protein milk (optional, for extra protein)
Instructions
1. Heat olive oil or butter in a pot and sauté onion and garlic until fragrant.
2. Add broccoli and broth, then simmer until broccoli is tender.
3. Stir in milk or cream and bring to a gentle simmer.
4. Blend part of the soup for a creamier texture, leaving some broccoli pieces whole.
5. Add shredded cheddar cheese and stir until melted and smooth.
6. Mix in protein powder or high-protein milk (optional) and season with salt and pepper to taste.
7. Serve hot, garnished with extra cheddar or broccoli florets if desired.
Notes
Boost protein with unflavored protein powder, high-protein milk, or even cottage cheese blended into the soup.
For a lighter version, use low-fat milk and reduced-fat cheddar.
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat gently to avoid curdling the cheese.
